A two-step bioconversion process of ferulic acid to vanillin was elaborated combining two filamentous fungi, Aspergillus niger and Pycnoporus cinnabarinus. In the first step, A. niger transformed ferulic acid to vanillic acid and in the second step vanillic acid was reduced to vanillin by P. cinnabarinus.

Vanillin and ferulic acid have many uses, including:
Food additive
Vanillin is a primary flavoring component used in food, cosmetics, and pharmaceuticals. It’s also used in confectionery, perfumery, and food preservation.
Antioxidant
Ferulic acid is a potent antioxidant that can scavenge free radicals. It’s found in the cell walls of cereals like wheat, corn, and rice.
Biotechnological production
Ferulic acid is a precursor for vanillin production. Biotechnological processes can use ferulic acid to produce vanillin, which can then be used as a building block for other chemicals.
Ayurvedic decoctions
Vanillin and ferulic acid are components of ayurvedic decoctions like varanadi kashayam, which are known to have anti-obesity effects.
Curcumin degradation
When curcumin is degraded during cooking or heat processing, it produces vanillin, ferulic acid, and vanillic acid.
Waste disposal
Agro-industrial wastes like rice bran, corn cob, and wheat bran are rich in ferulic acid and can be used to produce vanillin.
