Annatto extract is an orange-red food coloring or seasoning made from the seeds of the annatto tree (Bixa Orellana) that grows in tropical areas of South and Central America.
Water-soluble annatto extract is a red to brown liquid, block, powder or paste. It has a slight odor. The main pigment component is the sodium or potassium salt of norbixin, a hydrolysis product of annatto, which has very good dyeing properties and poor sunlight resistance. It is soluble in water, and the aqueous solution is yellow-orange and alkaline. It is slightly soluble in ethanol. It is insoluble in acid. The pH value should be around 8.0 when using this product.
Oil-soluble annatto extract is a red to brown solution or suspension. The main pigment component is annatto (Bixin, C25H30O4=394.5). Bixin is an orange-purple crystal with a melting point of 217℃ (decomposition). It is soluble in alkaline solutions, insoluble in acidic solutions and can form precipitation. It is insoluble in water, soluble in oils, propylene glycol, and acetone, and is not easily oxidized.
Properties: Reddish brown liquid, block, powder or paste; easily soluble in water, slightly soluble in ethanol in alkaline solution; high color value, strong heat resistance, can withstand high temperature of 180℃ without discoloration and stable color; wide range of use and convenient for food coloring.
Uses: It has good affinity for milk protein and is suitable for cheese and cheese products; its color ranges from orange to yellow; it is used for meat products, candies, baked goods, beverages, snacks and other foods, especially for the coloring of cooked meat products. Water-soluble annatto extract are used for the coloring of sausages, bean paste, snacks, aquatic products, etc. Oil-soluble annatto extract are used for the coloring of cheese, butter, ice cream, etc.
