Gardenia blue color is a natural colorant extracted from the fruit of the Rubiaceae plant gardenia using modern biotechnology. It is a light gray to dark blue powder or liquid, highly water-soluble, easily soluble in hydrophilic solvents such as aqueous ethanol and aqueous propylene glycol, insoluble in non-polar organic solvents, stable in pH 3-10, and does not fade when heated at 120℃ for 60 minutes. It is almost unaffected by Ca2+, Mg2+, Al3+, etc., but darkens when encountering Fe3+ and Sn2+ in acidic conditions.

Gardenia blue pigment can produce a unique blue tone, has stable physical and chemical properties, good coloring power, and is safe to eat. Gardenia blue is not often used for direct coloring in food processing. It is mainly used in combination with natural yellow pigments such as gardenia yellow pigment and safflower yellow pigment to prepare green pigments of different colors. Compared with extracted chlorophyll, the green pigment prepared with gardenia blue pigment has better controllable color tone and good acid resistance, and can be used in acidic foods and beverages.
