Carmine red color, also known as cochineal extract, carmine, carmine acid, cochineal aluminum, is a natural pigment extracted from female cochineal growing in different regions and types of cacti. The main component is carmine acid, and the commercial cochineal product itself is an aluminum chelate of carmine acid. Carmine is an anthraquinone derivative, with the appearance of red rhombus crystals or reddish brown powder. It is insoluble in cold water, slightly soluble in hot water or ethanol. It can be dissolved in alkali, but insoluble in dilute acid. It is insoluble in ether, chloroform, and benzene. In alkali and dilute acid, the color changes with the pH of the solution, orange-yellow in acid, dark red in neutral, and purple-red in alkaline.
